Cajun Fried Crawfish (Cajun

| 1 lb. crawfish tails |

| Batter Mix |
| 1/4 cup evaporated
milk |
| 2 eggs |
| 2 tablespoons vinegar |
| 1/2 teaspoon red
pepper |
| |
| Flour Mix |
|
2 cups
flour |
| 1/2 teaspoon baking
powder |
| 1/4 teaspoon salt |
| 1/4 teaspoon red
pepper |

Mix batter ingredients in one bowl, and flour
mix ingredients in another bowl. Dip crawfish tails in batter.
Remove and drop in flour mixture. Drop in hot oil (380°)
and cook until light golden brown. Serve while hot. |
