Crawfish Puree'
and Broccoli Stuffing

T. butter
1/2
c. chopped Onions
1
1/2 C. chopped Broccoli
1/2
C. broccoli flowers (small pieces)
1/4
C. onion tops chopped
1/4
C. chopped parsley
1
C. cheddar cheese
Seasoning
to taste

Catfish fillets
Saute' onions in butter,
add chopped broccoli. Add Crawfish puree', parsley, onion
tops, and small flowers. Mix well. Add cheese and season
to taste.
Season
catfish fillets well. Stuff with crawfish stuffing and
garnish. Bake 20 to 30 minutes.
